Passion and perseverance are the hallmarks of Inez Cook and her partner Remi Caudron, co-owners of Salmon n’ Bannock Bistro in Vancouver. They saw an opportunity prior to the Vancouver Olympics to open a fully licensed restaurant serving First Nations cuisine.
